Schlotzsky's is a popular casual restaurant chain serving sandwiches, pizza, flats, soups, salads and more. Schlotzsky's first opened in 1971, with a tiny shop on a busy street. In the beginning days, they only sold one sandwich (now aptly named The Original) on a frisbee. They baked their bread from scratch every morning, and only closed their doors when they ran out of sandwiches to sell.

Eventually they expanded to two sandwiches. Then three. Then four. Soon enough Schlotzsky's was large enough to expand to multiple locations, but the spirit of mastering one product before moving on to the next has stayed with them. Every location still bakes their bread from scratch in the mornings, and believes in the Schlotzsky's mission of working for passion.

In 2016, Schlotzsky's attempted to corner the Millenial market with a new restaurant chain named Schlotzsky's Austin Eatery, which aimed to serve food solely Austin-inspired. The first location opened in Duluth, Georgia, with other slowly following.

Schlotzsky's is a privately held franchise chain of restaurants, specializing in sandwiches. The company is headquartered in Atlanta, Georgia. Schlotzsky's has more than 350 franchised and company-owned locations worldwide. Most locations are in the south and southwestern United States, but the company is expanding into areas across the country, particularly the north and southeast.

In 1971, Don and Dolores Dissman founded the company in a "small, hole-in-the-wall shop" in Austin, Texas. The initial menu consisted of one sandwich, called "The Original," consisting of mixed meats, cheeses and black olives on a freshly made, toasted bun." It was based on the Muffuletta sandwich. In 1981, the company had 100 franchise stores when real estate investors, John and Jeff Wooley and Gary Bradley, purchased the company for less than $3 million. Bradley split with the Wooleys in 1982, with Bradley taking the real estate business while the Wooleys kept the chain.
