All about Tijuana Flats

Tijuana Flats serves Mexican comfort food in a fast food quick serve fashion. They are known for making their food from scratch for each order, down to their guacamole, salsa, and queso. It has grown from its creation in 1995 to a chain of 125 restaurants across 4 states. In addition to their main business, the restaurant has its own hot sauce line. They also founded the Just in Queso Foundation in 2007, which focuses on giving back to their community.

Some early history from Wikipedia:

"Tijuana Flats was started in Winter Park, Florida. It was modeled after Burrito Brothers, a Mexican restaurant in Gainesville, Florida and funded with $20,000 in borrowed money from Wheeler's family. Students from Wheeler's former college made up some of the restaurant's early customers.

After the third location was opened, a semi-retired restaurant executive, Camp Fitch, was invited to Tijuana Flats by his golf partner. In 1999, Fitch invested in the company and was appointed its CEO to expand the company. When the fourth location opened, the founder's dad, Chester Wheeler, was reimbursed for his $20,000 loan used to start the company and joined as the CFO."

Tijana Flats grew to have six locations in 2001, and further expanded to 65 locations in 2009. The company has been owned by AUA Private Equity firm since 2005, and has headquarters in Maitland, Florida. They formerly used a corporate-ownership structure for their stores, but transitioned to a franchising program in 2007.
